I’m not sure what possessed me to make these Banana Bran Muffins. I really like banana bread, and I already had buttermilk in the refrigerator, but in the end I think it’s just that I’m nuts for baking.

For being a healthy recipe, these muffins are quite tasty. They baked up big and moist, not dry like you might expect from a bran muffin, or anything with bran in the name. And if you’re concerned like I was about finding unprocessed wheat bran at your grocery store, I found it easily in the baking aisle near the flours at my neighborhood grocery store.
