When I told the husband we were having Barbecue Portobello Quesadillas (for two, not four) for dinner, he said, “I love food blogs.” I do spend more time these days looking for new and exciting recipes, and this one is definitely a keeper.

I used Famous Dave’s Rich & Sassy barbecue sauce and ground chipotle pepper. Cleaning the mushrooms and removing the gills was a breeze. (I used a spoon to scrape out the gills. The Internet suggests using a melon baller. Same difference.) I would agree with the Eating Well Web site that the mushroom mixture is reminiscent of pulled pork, but warn you that if you’re wanting pulled pork, you might be let down by mushrooms.
