It seems this casserole is becoming a New Year’s Day breakfast tradition. This is the second time I have made this (the first was a couple of years ago) but I think the results were just as good. With the ingredients that are in this recipe, it probably is smart to only make it every couple of years.

Typically we make the casserole the night before (sometime during the New Year’s Eve festivities) and let it chill in the refrigerator overnight. (The picture above is right before adding the egg/cream mixture.)

After adding the last couple eggs and cream, and then topping with a generous amount of additional parmesan cheese this thing is ready for the oven.

This is definitely not an everyday breakfast item, or even a go to recipe for the weekend, but for special occasions this breakfast casserole can’t be beat.
