The recipe was a necessity when I decided to make Crab Cakes. I wanted to try a sauce that I hadn’t used before. I have been fascinated with aioli for some time and this was my first attempt at it. I got out the food processor and the entire recipe took about two minutes to make.

It tasted so much better than store bought mayonnaise. This could definitely be a replacement for that. The only thing that concerned me was the raw eggs but I figured if you buy high quality eggs, it will help to minimize the chance of a food borne disease. Be warned though. Raw eggs can definitely be bad for you.

Here is the recipe that I used:

  • 2 egg yolks
  • 1 tablespoon garlic
  • 1 jar roasted red pepper, drained
  • 2 tablespoons stone ground dijon mustard
  • 2/3 cup olive oil
  • Fresh lemon juice
  • Salt and pepper to taste
  • 3-4 drops of Tabasco Sauce (optional)

Directions

  1. In a food processor combine egg yolks, garlic, red pepper and mustard.
  2. With the food processor running, slowly drizzle in the olive oil until the aioli reaches desired consistency. The mixture should be think and smooth.
  3. Season with lemon juice, salt, pepper and Tabasco sauce.
