It’s a comfort food sort of week at my house and we kicked it off with pancakes. Nothing fancy, just straight up buttermilk pancakes from a family recipe.

These turned out a little thinner than usual. A little extra flour would have helped, like the recipe suggests.

Pancakes

  • 2 cups buttermilk
  • 2 eggs
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 2 tsp. sugar
  • 1 heaping tablespoon butter, melted*
  • 1 1/2 cups flour

Put eggs in mixing bowl & beat with beater well. Add sugar & salt. Stir. Add buttermilk, soda, baking powder & flour. Beat until smooth. Add melted butter. (If too thin add more flour.)

* My grandmother never includes the butter. My mother used oil instead, and taught me to use oil. So there you go.
