As soon as I saw these Pumpkin Whoopie Pies posted on Just Eat It, I knew I Just Had To Make Them. Had to.

Still, these gems exceeded my expectations. My house smells like Pumpkin Paradise and I have two dozen* of these cake-like cookies filled with frosting. Pure fall bliss!

* The recipe states I should have 30 pies, but I ended up with only 24. Honestly, I’ve never had a cookie recipe yield what the recipes says it should yield. Oh well.
