I had leftover pumpkin from the Pumpkin Whoopie Pies, so I decided to turn it into bread. We’ve tried other pumpkin bread recipes with little success, but this recipe from Simply Recipes is a total winner. It baked up just right and in the advertised time (60 minutes).

As soon as I saw these Pumpkin Whoopie Pies posted on Just Eat It, I knew I Just Had To Make Them. Had to.
Still, these gems exceeded my expectations. My house smells like Pumpkin Paradise and I have two dozen* of these cake-like cookies filled with frosting. Pure fall bliss!
